The exception to the rule in the Elemental series, Cypher’s Cabernet Sauvignon is embellished with a touch of a second varietal – Petit Verdot. While the Cab Sauv stands strong and beautifully on it’s on with its rich mouth feel, deep complexity and velvety finish, the Petit Verdot contributes a wonderfully jammy component to both the aroma and mid-palate. So why is this not labeled a blend? Government labeling rules are strange (go figure), stating a wine can be labeled single varietal if it contains at least 75% of one varietal.
